This coffee almost didn't happen. During our visit to Pepe in September, he placed a coffee he was having trouble with, this green tipped Gesha. Over two days of experimenting, we were able to roast this coffee far lighter than his standard practice, bringing forward all the jasmine florals and delicate tactiles of this Gesha.
